Ricotta Omelet
- 3 Eggs
- 1/2 of a medium red bell pepper
- 1 1/2 tablespoons of organic ricotta cheese
- handful of finely chopped red onion
- 1 teaspoon of organic coconut oil
- 2 drops of organic vanilla extract
- 1 teaspoon of maple syrup

Scramble the 3 eggs in a bowl and add your vanilla extract. set it aside. Finely chop your red onion and red bell pepper, set it aside. Melt your coconut oil in your frying pan. Add your eggs to the frying pan, once you see the egg is cooked on the bottom, turn it over so all the egg cooks evenly, once this happens, add your peppers, onions, and ricotta cheese then fold in half to create your omelet. Cover with a pan lid for about one minute. Place on your plate and lightly drizzle with 100% pure maple syrup. |
